Beef tripe or bot bhuna or vuri bhuna is a traditional food of Bangladesh with full of taste. Beef tripe or bot bhuna or vuri bhuna also known as street foods. In major cities, vuri bhuna is one of the most popular street foods. However, bot bhuna is normally being cooked in each and every house in rural areas. Apart from this, beef tripe or vuri bhuna recipe is different from each other but the famous and tasty one is from Gopalgonj or Faridpur area.

========= ========= Ingredients: ========= ========= 

1.  1.5 kg beef vuri To boil ( 1 tsp turmeric powder & 1 tsp salt ) 

2.  ½ cup oil 

3.  Coconut Milk 300g 

4.  4-5 green chili slice 

5.  3 bay leaves, 4 cinnamons, 5-6 piece cardamom and 4-5 piece cloves 

6.  2 cup chopped onion 

7.  3 tbsp ginger paste 

8.  2 tbsp garlic paste 

9.  2 tsp turmeric powder 

10.  1 tbsp red chili powder 

11. 2 tsp coriander powder 

12. 2 tsp cumin powder 

13. 1 tbsp salt 

14. 4 -5 Dry Red Chili slice 

15. some potato cubes 

16. 2 tsp roasted cumin powder

                    ========= ========= PROCEDURE: ========= ========= 

1.  Take around 1.5 kg beef vuri. And this is washed  properly  & boiled for 50 minutes with turmeric and salt . 

2.   After 50 mins, the boiled water was removed from the vuri. Let it keep it for 2 or 3 hrs. in the freezer. Then  cut into little pieces.

3.  Add ½ cup oil in a cooking pan. Add 3 bay leaves, 4 cinnamons, 5-6 piece cardamom and 4-5 piece cloves. Stir and fry for a few seconds. Now add 1 cup chopped onion. Stir onion with oil. Fry onion until it is transparent in color.

4.   Then Add 4-5 green chilis with 1 tsp turmeric powder, 1 tsp red chili powder, 2 tsp coriander powder, 2 tsp cumin powder and 1 tsp salt. Stir and mix all.

5.   Add 3 tbsp ginger paste, 2 tbsp garlic paste,  Mix all spices with vuri perfectly. Keep the flame medium. Now cover the pan for 8-10 minutes to sauté nicely.

6. After 10 mins cooking, add some dry chili and small shaped potatoes.

7. Finally add coconut Milk 2 cups/300g.

8.  Few minutes later, open the lid. In between these 10 minutes, I already open the lid 2-3 times and stir the vuri perfectly. Vuri sauté nicely. Vuri needs enough time to tender. So, cover the pan in low-medium flame, till the vuri is sodden perfectly.

9.   Around 1/2  hours later, open the lid. Stir vuri. Vuri is getting almost tender. Check the amount of salt, if needed add more. Again cover the pan for 20 minutes.

6.  20 minutes later, open the lid. Stir and mix vuri. Vuri is tendered perfectly. Add 2tsp roasted cumin powder. Stir and mix all. 

7.  Stir and fry vuri in medium flame.  Dry this vuri gently.  Then, if you like, you can serve vuri with this gravy. 

8.  So enjoy this  perfect and yummy gorur vuri is done to serve.
